I'm Kristin.  I am a wife, designer, Christian and for now a SAHM.  My husband and I are parents to three kids- Dylan Archer, Kyler Jude and Noelle Rose. Despite the name, this isn’t a mommy blog and you won’t find sponsored content here. My target audience is actually my children when they grow up if they wish to reflect on their childhood so everything I share has them at the forefront of my mind and secondly those who wish to follow along my journey. I created this space to document my family's adventures and lessons I've learned along the way.  The Mom Jungle is a modern interpretation of both the family newsletter and scrapbook.  

I call this The Mom Jungle because motherhood is fun and messy, filled with laughter and sometimes heartache… it truly is a jungle out there!

Christmas Crack: Saltine Toffee Cookies

Tomorrow I am meeting my high school girlfriends for our annual Christmas cookie exchange.   I hadn't decided what I was going to bake, but when my baby was up at 3:30 am and then again at 6:00 am this morning- hello 9 month sleep regression-  I knew I needed something easy and quick.

I decided to make this "Christmas Crack" introduced to me by my mother-in-law.  They require only 4 ingredients and a few minutes to whip up, but WHOA MAMA! They are that good.  


CHRISTMAS CRACK: SALTINE TOFFEE COOKIES

PREP TIME:  15 MIN    |    TOTAL TIME:  1 HR 15 MIN

INGREDIENTS

  • 1 sleeve saltine salted crackers

  • 1 cup butter

  • 1 cup dark brown sugar

  • 2 cups semi-sweet chocolate chips

DIRECTIONS

  • Preheat oven to 400 °F

  • Line jellyroll pan with parchment paper

  • Set saltine crackers (salted side down) on the parchment paper

  • In small saucepan melt butter + brown sugar

  • Bring to boil for 2-3 minutes stirring continuously

  • Pour caramel sauce over crackers and spread evenly

  • Bake for 5 minutes

  • Immediately sprinkle with chocolate chips

  • Allow chips to soften for approx. 3 minutes and spread chocolate evenly

  • Completely cool

  • Cover and refrigerate for at least one hour (or until set)

  • Break in pieces and store in airtight container
