I'm Kristin.  I am a wife, designer, Christian and for now a SAHM.  My husband and I are parents to three kids- Dylan Archer, Kyler Jude and Noelle Rose. Despite the name, this isn’t a mommy blog and you won’t find sponsored content here. Ultimately my goal is to leave it as a legacy to my children and possibly anyone else who wishes to follow my journey. I call this The Mom Jungle because motherhood is fun and messy, filled with laughter and sometimes heartache… it truly is a jungle out there!

As it's still technically summer, I'm sharing my mother-in-love aka 'Mama V's' summertime peach cake!  Served with vanilla ice cream this makes the perfect dessert... enjoy! xx


SUMMER PEACH CAKE

PREP: 20 MIN        |        TOTAL TIME: 1 HR 15 MIN

INGREDIENTS

  • 1/2 cup butter

  • 3/4 sugar + 2 Tbsp

  • 2 large eggs

  • 1 cup flour

  • 1 tsp. baking powder

  • 1/2 tsp almond extract

  • Icing sugar

  • 3 large ripe peaches, peeled and sliced in thin wedges

DIRECTIONS

  • Cream butter + sugar with stand mixer

  • Slowly add in eggs and fold into mixture

  • Add flour + baking power + almond extract

  • Mix together

  • Pour in greased pie plate or springform tart pan

  • Arrange peaches

  • Bake 350 °F for 45-50 minutes or until inserted toothpick comes out clean

  • Sprinkle with icing sugar once fully cooled
