I'm Kristin.  I am a wife, designer, Christian and for now a SAHM.  My husband and I are parents to three kids- Dylan Archer, Kyler Jude and Noelle Rose. Despite the name, this isn’t a mommy blog and you won’t find sponsored content here. My target audience is actually my children when they grow up if they wish to reflect on their childhood so everything I share has them at the forefront of my mind and secondly those who wish to follow along my journey. I created this space to document my family's adventures and lessons I've learned along the way.  The Mom Jungle is a modern interpretation of both the family newsletter and scrapbook.  

I call this The Mom Jungle because motherhood is fun and messy, filled with laughter and sometimes heartache… it truly is a jungle out there!

Farmer's Market & Apple Crumble

Today was absolutely beautiful! The air was warm and the leaves displayed vibrant hues of oranges, reds, and yellows.  The beginning of autumn is my favourite time of year.

We decided a trip to the Farmer's Market was in order.  With bushels of Royal Gala apples for the low cost of $1 (fresh and local woo-hoo!), we decided tonight would be the perfect night to make Apple Crumble.  [eek... I'm totally sabotaging my workout earlier today. #yolo]

I've tried a few recipes over the years and I've come up with something that's easy and yummy.  Serve on its own or with a scoop of vanilla ice cream.


APPLE CRUMBLE

PREP TIME:  20 MIN        |        TOTAL TIME:  60 MIN

INGREDIENTS

  • 6 apples- peeled, cored and sliced thinly

  • 2 TB cinnamon sugar

  • 1 cup brown sugar

  • 1 tsp cinnamon

  • 1 cup brown sugar

  • 3/4 cup flour

  • 3/4 cup old-fashioned oats

  • 1/2 cup butter- cut into small cubes

DIRECTIONS

  • Preheat oven to 350 °F

  • Grease 9x9 baking dish

  • Line apples in baking dish and sprinkle with cinnamon sugar

  • Oat Topping: Mix together brown sugar, cinnamon, flour + oats in bowl

  • Cut butter into mixture either using pastry cutter or by hand

  • Sprinkle mixture over apples

  • Bake for 40 min
