I'm Kristin.  I am a wife, designer, Christian and for now a SAHM.  My husband and I are parents to three kids- Dylan Archer, Kyler Jude and Noelle Rose. Despite the name, this isn’t a mommy blog and you won’t find sponsored content here. My target audience is actually my children when they grow up if they wish to reflect on their childhood so everything I share has them at the forefront of my mind and secondly those who wish to follow along my journey. I created this space to document my family's adventures and lessons I've learned along the way.  The Mom Jungle is a modern interpretation of both the family newsletter and scrapbook.  

I call this The Mom Jungle because motherhood is fun and messy, filled with laughter and sometimes heartache… it truly is a jungle out there!

Cabin fever has set in!  We've been under extreme cold warnings for the past two weeks.  Last year the phrase "Polar Vortex" was all the rage; this year "Siberian Air Mass" is making waves.  Either way, it is cold up in here!

Here's how we have been enjoying indoor fun this week:

Yesterday I visited with a dear friend from high school and her little boy.  It was wonderful seeing old friends and making new ones.  Dylan had a blast (minus the hair pulling and poking... my guy was the naughty one)!

As Dylan turns one in a week, we had a pj + picnic + party hat kind of morning.

Fun fact- Today is one year since my official due date (February 26, 2014) so I thought I'd share this #throwbackthursday photo.  I miss my bump and "glorious" preggo hair, but I love being skinny again and kissing my sweet boy's cheeks more lol!

Anyways I digress.  This afternoon I craved something both nutritious and spicy to snack on.  I whipped up some oven-roasted chickpeas and thought I'd share my recipe with you.  Enjoy!


ROASTED SPICED CHICKPEAS

PREP TIME:  5 MIN    |    TOTAL TIME: 40 MIN

INGREDIENTS

  • 1 can of chickpeas

  • 2 TB olive oil

  • 1 tsp chilli powder

  • 1 tsp cumin

  • 1/2 tsp cayenne

  • 1/2 tsp paprika

  • Sprinkle of sea salt

DIRECTIONS

  • Preheat oven to 400° F

  • Rinse, drain and dry chickpeas

  • Combine chickpeas + olive oil + spices

  • Spread evenly on baking sheet

  • Bake for 35 minutes, stirring at the 20 minute mark

  • Enjoy!
